or maybe into the pkgmk.conf manual:

PKGMK_WORK_DIR='STRING'
       Set directory for building packages. It shouldn't be on a filesystem
       mounted with noexec flag.
       Default: 'foo/work', where foo is the directory of the Pkgfile.
